The freeze-drying process is carried out at low temperatures, making it particularly suitable for many thermosensitive substances.
Drying occurs with the material in a frozen state, so the volume remains virtually unchanged and the original structure is preserved, preventing concentration phenomena.
Since drying is carried out under vacuum conditions, the oxygen content is extremely low, which protects substances prone to oxidation.
The drying process removes between 95% and more than 99% of the moisture content, allowing for prolonged storage without deterioration of the freeze-dried product.
